With only 400 cases produced, this limited-edition Pet Nat showcases the dedication and meticulous care that goes into every bottle. The hand-picked fruit was whole bunch pressed, and the juice was cold settled to ensure a clean ferment, preventing unwanted gushers while retaining the wine's natural balance and acidity. Cross-inoculated from our rosé and fermented cool, this wine is all about preserving its aromatic freshness. Just before bottling, a touch of frozen juice was added under crown seal to initiate a natural secondary fermentation, creating a lively and refreshing effervescence. Perfect for those who appreciate a handmade, small-batch wine with character and soul.
